The 2012-2013 deer season in Maryland, for white-tailed and Sika, begins Sept. 7 (bow only) and continues through January. And one of the main reasons many Maryland hunters head to the woods is to stock up the freezer, states Maryland's Department of Natural Resources.
For those who are running out of creative ways to prepare their deer once they get it home, or for those who are simply the recipient of a side of deer from a neighbor or relative this season, we've asked some Maryland hunters to share their recipes. Thanks to Curt Garris and "Big" Hank Ramey for the following venison dishes.
Tip: Wondering how to get that gamey taste out of an older animal? Garris says all you need to do is soak the meat in carnation evaporated milk overnight, in the fridge. "It'll will take the gamey taste right out," he says.
